Delicious rice pudding with mastic and wild cherries

My grandmother from Chios used to make this dessert from fresh goat milk, (from our own goat) and mastic from our own trees.



The wild cherries in syrup are ready made, and also a traditional treat of Chios island.


Delicious rice pudding with mastic and wild cherries

ingredients 
  • 1 tea cup water
  • 1/2 tea cup risotto rice
  • 1/2 tea cup sugar
  • 4 cups goat (or cow) milk
  • 2 table spoons corn flour
  • 5-10 grains of mastic (or one vanilla)
  • Wild cherries in syrup
instructions
  1. Bring the water to boil
  2. Add the rice and cook on low fire for about 10 minutes
  3. At the same time bring the milk to boil
  4. Add the sugar to the boiled rice and  steer until dissolved 
  5. Take 6 tablespoons from the milk and dissolve the corn flour
  6. Add the boiling milk to the rice and steer by using a whisker
  7. Add the ground mastic to the mix
  8. Add the dissolved corn flour in the mix and steer until it goes thicker
  9. Pour into small bowls and let them cool down
  10. Put in the fridge and after 30 minutes they are ready to serve
  11. Add a tea spoon of wild cherries in syrup on top and serve!

It is all about the analogy, it doesn't matter if you tea cups are a bit smaller or larger ;)



This is how the rice will look like when it is ready. Make sure it absorbed its water.


Make sure to grind the mastic before adding it to the mix.



Pour in small bowls, it might seem too liquid but it will become thicker once it cools down :)



Serve with wild cherries in syrup on top.
